Happy Friday everyone! Today I've got a recipe for you that is very easy and requires only three ingredients!
Recently I've been working on a food photography project that I'll do another post on later, but I made an apple tart with vanilla whipped cream. It may have been for a school project, but I'm still an overachiever and wanted to make all the elements from scratch. I originally wanted to use a vanilla pastry cream, but I was low on egg yolks and didn't want to go out and buy a whole thing of cornstarch just for this one recipe. The whipped cream recipe I found is from Frosting and a Smile, here's a link to the recipe! I was taking photos at the same time, so making it took longer for me, but if you have an electric mixer and all three ingredients ready, it will come together in about five minutes!
It is absolutely possible to make whipped cream by hand, it will just take a lot longer. For this recipe, you will need:
1 cup of heavy cream
3 tablespoons of powdered sugar
1/2 teaspoon vanilla
Combine all three ingredients in your mixing bowl. I used a stand mixer with a whisk attachment and it worked wonderfully.
Fire up your mixer, you're going to want it at one of the highest speed settings if not the highest. It will be loud and your machine might shake or make noises or something, but it's okay, it will survive! What it's doing is incorporating air into the cream, much like what you do when you whip egg whites. The cream also might splatter, so if you want to contain a mess you could drape a dish towel over the mixer until the cream thickens a bit. Mine didn't splatter too much, but it's better to be safe than sorry.
If you just let it run and do its thing, you'll have fresh whipped cream in minutes! As it got thicker, I scraped the sides of the bowl to make sure everything was incorporated. You can use this as a frosting or dip, put it on ice cream sundaes, pies, or other desserts. It worked perfectly for my apple tarts, and I have leftover whipped cream to enjoy.
